Shortbread

Ingredients:
2 1/4 cups pastry flour*
1/2 cup cornstarch
1 cup butter
3/4 cups confectioner's sugar

Directions:
* If you don't have pastry flour, here is a simple substitution:
Measure 2 1/4 cups all-purpose flour, then remove 4 tbsp. and 1 tsp of flour. Replace this flour you removed with 4 tbsp. and 1 tsp. of cornstarch. Then, sift the flour twice. You can now proceed to the recipe.

Sift the flour and cornstarch mixture. Set aside. Cream the butter and sugar until light. Pour the cream into the flour mixture. Mix to form a soft dough. Roll out the dough and cut into desired shapes with a cookie cutter. Bake in a preheated oven at 225 degrees F for about 45 minutes.
