Pineapple Jub Jub

Servings: approx 30 small cubes (2 inches)
Preparation time: 10 min
Cooking time: 5 min
Resting time : 4 hrs
Level: Intermediate

Ingredients:
2 cups granulated sugar
2 tbsp. + 1 tsp. gelatin
3 drops lime juice
3/4 cup cold pineapple juice

Directions:
Soften the gelatin in 1/2 cup of the pineapple juice. Boil the sugar and the remaining 1/4 cup of pineapple juice into a syrup. Boil until the syrup can form long thin threads. Remove from heat and stir into the gelatin and lime juice. Mix well. Let it stand for about 4 hours.

I started cutting strips out of the tray. Start with a knife. Note, some sugar crystals may have settle to the bottom. Then cut and roll the gelatin blocks in sugar.
