Carrot Cake

Ingredients:
2 cups all purpose flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. nutmeg
2 cups brown sugar
1 cup olive oil
4 eggs
8 oz. crushed pineapple
2 cups grated carrot
1/2 cup choppped nuts (walnuts, peanuts, and/ or almonds)
1/2 tsp. grated orange rind

Directions:
Sift together the flour, baking powder and baking soda. Add the cinnamon, nutmeg and sugar.
Add the oil and beat well. Beat well until the batter is light. Add one egg at a time, beat well until the batter is light and fluffy. Blend in the grated carrots. Then the nuts. Bake at 375 F in one or 2 tins for 30 to 35 minutes or until done.
